  Luke Varcin of Varci Tonic

TELL US ABOUT YOUR SMALL BUSINESS?

I am a producer of small batch tonic syrups. There are now plenty of small gin producers but I am one of 2 businesses in SA producing such products and the only one in the Barossa.

WHAT ARE THE FLAVOURS OF TONICS THAT YOU SELL?

I currently make three tonics – these are my Citrus Tonic, Lemon Verbena Tonic and Pink Peppercorn Tonic.

My Pink Peppercorn Tonic is made using local pink peppercorns from 100+ year old trees growing at Seppeltsfield.

I also make seasonal tonics – such as a Rhubarb flavoured Tonic and also an Elderflower Tonic.

WHY DID YOU START YOUR BUSINESS?

I’m a chef at a local Barossa restaurant and was drawn to the interesting flavours that can be paired with the fantastic local gins on the market these days.

In the future I intend to expand production to include a range of soft drinks and juices made from local produce where possible while working in collaboration with gin distilleries to create personalised tonics to suit their unique gins.

WHO WILL VISITORS MEET AT YOUR STALL?

I’m at my stall each week at the market with samples of my tonics for customers to try.
