Banana & Oat Pancakes

With plenty of fibre and protein, these pancakes will keep you going all morning.

It’s so easy to make the batter in the blender and you can even pour it straight into the pan!

If you need them dairy free, simply swap the milk for a dairy-free alternative.

Ingredients

  • 2 medium bananas
  • 1 1/2 cups (150g) rolled oats
  • 2/3 cup (160ml) milk
  • 1 tsp vanilla extract
  • 1 tsp bicarb soda
  • 3 eggs
  • 1 tsp (10ml) olive oil
  • 1 cup fresh berries
  • 1 cup (260g) plain natural or Greek yoghurt

Method

  1. Throw all the ingredients except oil, berries & yoghurt in a blender and blend until smooth.
  2. Lightly coat a large nonstick frying pan with oil and heat over medium heat.
  3. Pour the batter (about 1/4 cup per pancake) onto pan. Flip when bubbles appear on top (about 2 minutes) and cook until golden-brown on both sides.
  4. Top with berries and Greek yoghurt.
