With the change in seasons, what are you most looking forward to this Autumn?

“Autumnal food is my favourite time of year- I love big root vegetables, swede is one of my favourites. Autumn menu-wise means more robustness and earthiness, in Britain it is also the start of the game season leading up to the glorious August 12, which signifies the start of the grouse season.

Mushroom foraging is something I used to enjoy immensely as well. It was a relaxing way to spend a morning or afternoon before heading into the fast-pace of the kitchen. 

What it will mean for the St Hugo restaurant menu, is a sprinkle of that “winter warmth-style food,” but still trying to keep it light at the same time. Celeriac and Jerusalem artichokes are always a welcome addition to menus and will hopefully feature –they are so diverse in their use for both meat-eaters and vegetarians alike.”
