Our Bee’s Knees cocktail celebrates the bright golden hues, flavours of rich toffee, caramel characters, tropical fruits and honey of the Semi-Gin.

Semillon grapes from a 102-year old vineyard in Williamstown, were macerated in Barossa Dry Gin for six weeks, allowing the natural sweetness to cut through the gin spirit and develop. 

The result …. a delicious, sweet up front, dry on the finish gin with a subtle nod to Barossa – it’s the Bee’s Knees.

  • 60 ml of Barossa Semi-Gin
  • 1 tsp Honey
  • 15 ml Sugar Syrup (or 15ml of honey syrup)
  • 20ml Lemon Juice


  1. Shake all ingredients on ice. 
  2. Fine strain into a coupette.
  3. Garnish with lemon rind or slice. 
  4. Enjoy!
