This muesli is high in protein and fibre and low in sugar; whilst still being crunchy and so tasty. Top with fresh fruit and Greek yoghurt (or a dairy free alternative) for a filling, healthy low-GI breakfast.
Gluten & Wheat Free
4 cups (580g) rolled oats
1 cup (140g) mixed nuts
1/2 cup (65g) sunflower seeds
1/2 cup (65g) pumpkin seeds
2 tbsp (40ml) olive oil
2 – 3 tbsp (40 – 60g) honey
2 tsp cinnamon
Preheat oven to 180 degrees celcius.
Combine all ingredients in a large bowl, mix until well combined.
Spread mixture evenly on a large baking tray lined with baking paper. Bake in oven for 20 to 25 minutes, stirring every 5 minutes, until lightly golden. Leave to cool then store in an airtight container.
