Reuben Sandwich

The cooler weather has set in so bring out that slow-cooker for hearty family feasts and, of course, delicious left-over classics. 

Note

THE NIGHT BEFORE…

Have a delicious silverside slow-cooked meal with all the trimmings.

I like to slow-cook my silverside in ginger beer with cloves, peppercorns, cinnamon, star anise and onion.

Ingredients

  • 3-4 generous thin slices of left-over slow-cooked silverside 
  • 2 x slices of dark rye bread
  • 2 x slices of Swiss cheese
  • 50g sauerkraut

Russian dressing

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2tbls tomato sauce
  • 2tsp horseradish
  • 2tbls grated onion
  • 1tsp hot sauce
  • 2tsp chopped parsley

Combine all ingredients
to make dressing

Method

  1. Fold your slices of silverside on top of one piece of rye. Top with sauerkraut, Swiss cheese, Russian dressing and your second slice of rye bread.
  2. Butter the outside and place under the grill or in a sandwich press until heated through
  3. Slice in half and enjoy the Reuben goodness!
